We Brought Italy With Us

I never thought that my business trip to Texas would end up with me marrying my beautiful wife, moving to Highland Village and opening a restaurant, but it did!

The restaurant idea began with one of my Dad’s visits.  Since he was not the type to sit still, he built me a wood fired pizza oven in my backyard and soon we were making incredible pizzas and sharing them with our neighbors and friends.  After many parties in the backyard and a long soul searching trip to Italy, we were inspired to open Pazzo! WoodFired Pizza.

Today, after 10 years, we are still making pizza and new friends with our partner Kevin Hill.  We are local, not a faceless business conglomerate.  Our kids have grown up here, attending Timber Creek Elementary, Heritage Elementary, Lamar MS, Briarhill MS and Marcus HS.

Over the years we’ve watched our patrons’ kids grow up, too.  It means a lot that many stop by and visit on break from college or even with their own families. We’re honored to have been a part of many graduations, proms and family milestones.  So yes, we are getting older, too! :)

Either old friends or new friends, come in and enjoy a great meal prepared with care and love!

Our ingredients, our cooking

DoughThe basics
The dough is half of the story. The care and craftsmanship that goes into making the dough is what makes a great pizza. Is the one thing that has the most impact on the results. We care about the results so we make our own dough, everyday.
Olive Oil
Olive OilThe Golden Liquid
Olive oil is just a gorgeous, silky oil. There are many different flavors and grades of olive oil, making it one of the hardest products to source from a reliable supplier. From our dough to the dressing and the final drizzle, we use extra virgin olive oil everywhere in our cooking.
Parmigiano-ReggianoTHE cheese
Parmigiano-Reggiano is the Italian King of all cheeses. Master cheesemakers have been crafting 100lb wheels of Parmigiano-Reggiano cheese throughout history and today we are still appreciating all that goodness.
Going back to the Roman times, this crafty ham has been revered in Italy over the millenniums. Aged and cured to perfection, every slice bursts with flavor making everything around it, better.
