Our Secret.

Our secret is that… there is no secret! Good Italian cooking is all about two things:

Quality raw ingredients.

Excellent ingredients allow for the dish to be simple and clean. By “clean” we mean, in style and form… uncomplicated, transparent, without being masked. Masking is only necessary when below-par ingredients are used and you really don’t want to allow your customer to ‘appreciate’ that sub-par quality. That is a basic tenet of any cuisine or any food preparation being at a restaurant or home. Often you hear people say, “if it is fresh, leave it alone”.  Exactly!

Proportions.

Proportions are often overlooked but are seriously at the foundation of a great dish. Growing up in Italy, you learn by training or most time by just being exposed to it, that a pasta dish is not better if swimming in the sauce. Or, that a pizza is best if it is not overly topped, or that a salad maybe not do well if drenched in dressing. Of course, ‘overly dressed’ is subjective and we respect other’s ideas of what the right quantity of things may be. But, the way we see it, there is such a thing as too much. More is not always better, more is just… more :)  Therefore, everything we make is proportionally balanced (our dressings, sauces, toppings, ratio bread to meats in a sandwich, etc…).
